Cry-Baby Cookies
Recipe from Mary Pitts, The Foxfire Book of Appalachian Cookery
Ingredients:
- 1 cup + 2 Tbsp shortening
- 1 cup + 2 Tbsp sugar
- 1 cup molasses or sorghum syrup
- 2 eggs, beaten
- 4 3/4 cups sifted flour
- 1 Tbsp baking powder
- 1 tsp salt
- 1 1/2 tsp baking soda
- 2 cups grated coconut
- 2 cups chopped walnuts
- 1 1/2 cups raisins
- 1 cup milk
Cream shortening, then add sugar, molasses/sorghum, and eggs. Sift together dry ingredients, then combine with coconut, walnuts, and raisins. Add dry ingredients alternately with milk to creamed mixture. Drop by tablespoonfuls onto a greased baking sheet. Bake in a 350 degrees Fahrenheit oven for 10 minutes. YIELD: 8 dozen cookies
Half recipe:
- 1/2 cup shortening
- 1/2 cup sugar
- 1/2 cup molasses or sorghum
- 1 egg
- 2 1/3 cup flour
- 1/2 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup coconut
- 1 cup walnuts
- 3/4 cup raisins
- 1/2 cup milk
Follow directions as above.
